In your data\tables directory you will find country.csv.
Before you change anything, make sure you are using csv for your countries and not mysql.
If your using csv... make a backup of the country.csv file.
Then remove the countries you dont want in the list. The entire line.
Most text editors will not show you hidden line breaks by default. Make sure the text editor shows these before you make changes. You dont want to accidently remove a linebreak from this file that is not meant to be removed.
Its not recommended to change this unless you know what you are doing. Again... make a backup of the file first.
