Files To Backup
I want to back up ccp every evening but do not want to do this with the whole store as it takes forever...what files should i

Are you running all your tables in csv mode? If so, you probably want these csv's:
tracking
trackitem
custacct
and maybe
maillist
product
category (if you changed anything)
Of course, if you're running these tables in MySQL, you can just do a mysqldump and get the whole database.
