Payment Methods - Product
Is there a way to limit the payment methods per product for a specific order? I have a product that is special order and I would like to limit the customer to "Provide your payment information over the telephone" payment option.
All other products would have the above option as well as the option to pay online with a credit card.

There are a few threads related to this. If your setup is simple enough, use one of the hacks descibed in one of those threads. Serious consideration is being devoted to creating a solution to address this in the next release.
