Can someone tell me why there are "Regional" UK countries like UK - England & Wales, UK - Scotland Mainland etc and there is also a country name called JUST "United Kingdon"

Having the "Regional" countries does give the option of differential shipping pricing in custom shipping - some couriers charge a premium for islands. If no need to differentiate then just use UK as a country and leave the others switched off. May need to check that the automatic country selection on county selection works correctly.

You can use System / Helpers / Localization to easily flip between using the single UK country, and using the UK - {region} entries for the country, and activating all the UK counties on the state/province level. Clients generally use the region/county setup when shipping via Royal Mail, and it makes VAT calculations accurate for all regions (even those in Great Brittan not part of the UK).
