Hello- we haven't made any changes to our cart but all of our orders are coming in "Contact Customer." Not sure what is happening. Any ideas?

Because you have activated the contact customer payment method and selected it as the default option.
Location: System Dashboard > Store > Commerce > Processing Gateways
and set the Contact Customer method to false.
