I've just been speaking to a UKMail rep about delivery of parcels. He stated that to reduce the number of lost parcels then the more information you can get from your customer about alternate delivery information (ie okay to leave with neighbour, leave in shed, etc.) the better.
Therefore, I would like to add to the delivery information provided on checkout so that customers could be asked to leave alternate arrangements. So, I'm assuming I need to add another column to ecom_orders, but which include do I need to amend?

Look at Store > Commerce > Checkout Form Fields. Create a form field and it will show up in checkout for customer selection, and will be sent in emails, print on your invoices, etc.
