I am testing this on one page

I can only get the add to cart button to work if I have the quanty box on there with a defaul value of at least one. I can get rid of it but when you add to cart it just takes you to the cart page without adding any items.
The quantity box is messing my layouts up. It has to go!

The methods are in the file John pointed you to. It's not something you can get to through the admin interface and given that it's a core file make sure you have a backup before you start making any changes.

How come this is such a big thing to change? I think this should be a feature to update for the newer version as it's integral in the layout of both categories and products

I found the file and had a go at modding it but saw no results
I want the category layout for the products on this page:

to have the quantity box next to the price without the following text "Enter the appropriate quantity for this item below." This is unnecessary and makes the product too tall.
It's not that I don't want quantities it's just that I don't think they need to be such a big thing on the category page.

That text may be found in the id gbu0.prodaddtocart.quantity in the khxc_formfields table. You should be able to modify it using raw DB admin.

Wouldn't be a trivial task to do that. The quantity area is in a completely different table cell than the price.

Not without jumping through hoops. There's a single include that is used for every small textbox throughout the site. If you change it for this situation it will also change every other use of it. If you're brave the XHTML include is "Formfield: Textbox (Small)".
