We need to change the sales tax rate for our state, which script can we find the sales tax percentages in?
Also, is there anyway to track through CCP what our total sales are, or total sales for a specific state are?

That's a bit tough to do right now. The program isn't real database friendly, but that's about to change with version 5.0 which is scheduled to be released in the next month. Hang in there for the time being and the upgrade will take care of all that. The upgrade price is going to be minimal, they say!!
