Is there a "Store Offline" switch at all, just prefer it to be offline whilst I set everything up, I've looked everywhere but cannot find it... thanks in advance

In the admin panel go to Store / Settings / Checkout. There’s a check out disabled message box. Type your message in there and the check out will be disabled.
