Git Version Control - Editing Core Files

If I decide to be bold, I may endeavor into editing some core files (mostly widgets, js and css).

Would it conflict with any part of the site if I used git for version control?

No, free free to use Git.  We've got several clients doing the same thing.

Azure repos is a very easy and clean solution to maintain source code changes that's like lipstick on GIT.  I'd strongly recommend it unless you're already familiar with administering GIT.
