I've got an old 5.1 site on one server and the future home of the upgraded v8 site on another server. Is there a way I can upgrade from 5.1 to 8 with them being on two different servers?
I mean how does the upgrade script work? Does it just crank out an updated database or is the purpose to overwrite a 5.1 install with a clean 8 install?

The installer for v8 would need a new database as it creates a whole new install even if they where both on the same server, the importer scripts would only work with both sites being on the same server and would import inforamtion into the v8 site from v5.1.

Right - but you only need a copy of the 5.1 directories and database on the new server - 5.1 doesn't actually have to be live on that new server to do the import. It just has to be accessible via the filesystem.

ah, okay. I actually thought that might be the case and attempted that yesterday, but I was having some issues because I had no idea where the database connection info is in 5.1.

It's actually easiest to export all of your tables to CSV mode on your current 5.1 install, then download it, then move them back into RDBMS mode once you've gotten all of the files (basically you're downloading a CSV only install at that point). That way on the new server you only have to worry about CSVs and not what's in the RDBMS.

Okay apparently I don't have 5.1. I have 5.0? Is there some way I can still do this? Could I possibly update the non-live copy of 5.0 to 5.1 and then run the upgrade script?
