Where am missing the one page checkout? In the V8 demo checkout is the same as V7.

Maybe you have javascript turned off in your browser or something. Aren't you noticing the page refreshes and changes as you make changes? The payment info page is gone in favor of collecting that info on the single checkout page. I think you're missing something.

I tried on three different computers with javascript turned on. Using guest checkout, V8 uses same 3 page checkout process as V7. I am testing with your V8 demo site.

CCP8 (guest checkout) is a two page checkout, not one. Well pages if you want to change the delivery address.
I find changing the delivery address on CCP8 to be obscure and obtuse. Have you tried to check out changing the delivery address on CCP8?
I suppose the benefit of CCP8 is multiple delivery addresses. For me that is an entirely non-event. I've been using CCP since 2007 and can think of only one time where I had two delivery addresses,

I have used an xp box with IE8, and 2 other 7 boxes with IE9 and get same (guest) checkout screen(s) as V7 has.

Just tested V8 guest checkout in Safari, Chrome, and Firefox. They all show checkout same as V7. Is anyone else getting the one-page guest checkout in V8?

Using the desktop version of the site (not mobile, and not connected to Joomla) once you access the checkout page and select whether you want to login, create an account, or checkout as a guest, all updates to the content of the page you're seeing are done via Ajax, meaning that it is a single page and the customer never leaves that page.
You will notice that no matter whether you create a new account, checkout as a guest, or login, you never leave that page - all updates are done via Ajax to the page content. Additionally, when you change delivery addresses, select shipping options, enter discount codes, and change your account info or payment method, the page updates itself via Ajax as well.
Additionally, the payment information dialog (where you enter your credit card, paypal, etc. info) was bumped up to the main checkout display negating the order review and additional display with the payment information entry.
The example that lgt gave of what they feel is a one page checkout wouldn't work in a complex system like ClickCartPro/EuropaCart due to the need to support shipping calculations based on the customer's address and the shopping cart, and would not be able to calculate taxes (VAT or Standard US) correctly. Additionally, that checkout wouldn't support multiple addresses, PayPal Express, tax refunds, disability claims, tax exemption number entry, custom checkout fields, custom sale and surcharge calculations, checking out with an account and a multitude of other features.
