Much of our business is custom, so we provide quotations on the proposed work. We require part of the payment up front and part of it at completion.
I want to create a cart item called Payment, where there is a text box for the quotation number to be entered and another variable box for the amount to be paid is entered.
I want to keep the item number at 1 - e.g. 1 payment of say, $345 rather than 345 of a 1$ item.
Is there a way to do this? This would be essentially having an item where the customer enters the price of it. before paying.

There are posts on setting up a payment for contributions which could be used to except payments but anything other than that would take a really big mod to keep track of payments and amounts owed on an order. I have a layaway mod on my site that can take multipal payments on orders but as I said it is a huge mod.
